And now that I’ve finished the Burst Tomato Galette with Corn and Zucchini that I made a couple days ago (super easy, totes delish, and it provided me with 5 lunch/dinners!), it’s onto Roasted Tomato Caprese Panzanella Salad for the next couple days of meals.
I must be on a tomato kick. Hmm. I’m gonna roll with it for now.
And I’ve been wanting to make Panzanella-something, anything, for weeks now.
This recipe is so easy and requires minimal, cheap, healthy ingredients.
